Flounder Roll Ups

So I made a new recipe tonight. I got the idea from another recipe for fish roll ups and ran with it. It’s super easy to make and cooks in only 15 minutes. It was really good too. I’m definitely going to be making this again.

Here’s the recipe:

4 thin flounder fillets
20 crackers
Seasoning of your choice (I used a teaspoon of oregano, basil, garlic powder, and a little ground mustard)
Thin slices of cheese (I used mozzarella)
Shredded Parmesan

Pre-heat the oven to 375 degrees. Crush the crackers in a large bowl and add the spices, stirring well. Lay the flounder fillets flat, place a piece of cheese on top, then roll it, gently. Secure the roll with toothpicks (remember to remove these before serving).

Put the roll in the cracker crumbs and spices and cover it well. Make sure to get the sides. Repeat with the rest of the fillets. Place all seasoned rolls on a baking sheet or pizza stone and sprinkle the top with Parmesan. Bake at 375 for 15-17 minutes. The rolls should become golden brown with the Parmesan melted on top. Remove the toothpicks and serve.

Makes 4 rolls.

They taste great. There’s a tiny bit of crunch from the crackers, the mozzarella is so smooth and the flounder is very soft, so all the tastes and textures blend well. I might experiment with seasonings a little.
