Chicken Meatballs with Atkins’ Pasta and red sauce

So I bought some Atkins’ pasta in hopes that I could once again have some pasta, which I very sorely miss. I decided to try some chicken meatballs to go with them too. Here is the recipe for the meatballs:


2 boneless skinless chicken breasts cut into strips and pulsed in a food processor until ground
1 clove garlic, minced
2 strips bacon, diced
1 egg
1 tablespoon extra virgin olive oil
2 tablespoons homemade tomato sauce
3 tablespoons chopped cilantro


Pre-heat the oven to 400 degrees.

Dice the bacon and cook it in a pan over medium head. Add the garlic and cook until bacon is crumbly.  Remove from the heat and cool slightly.

In another bowl combine the ground chicken, egg, 1 tablespoon of tomato sauce, and cilantro. Add the bacon, and garlic. Season with salt and pepper to taste and mix well. Form meatballs and roll into little balls, about 1 tablespoon of mixture per ball. If the mixture is too dry, add more tomato sauce.  Place the formed meatballs into a large baking dish about one inch apart.

Mix the olive oil and the rest of the pasta sauce and gently brush over the top of the meatballs. Put in the oven and bake for 15-17 minutes.

I have to say, the Atkins’ pasta was delicious. It tasted a little like whole wheat pasta, but it was totally edible. The family enjoyed it too. I recommend it.
