I love me some chicken nuggets. So I was really excited when I saw a low-carb version. I was hoping that it was delicious and it, in fact, is!
2 cup polenta (AKA cornmeal)
3/4 cup finely grated parmesan cheese
6 chicken breasts, flatten slightly and cut into chunks
1/2 tablespoon garlic powder
1/2 tablespoon Italian seasoning1/2 tablespoon basil
Preheat the oven to 390 degrees F.
Prepare chicken by flattening and cutting into bite-sized chunks.
Combine the polenta, spices and the Parmesan in a bowl and mix well.
Dip the chicken pieces into the polenta mixture and ensure they are thoroughly coated.
Place the nuggets onto greased baking tray and bake for 15 minutes or until cooked and golden.
