Star’s Christmas Cookies

cookieeditI made some cookies for Christmas and they were so delicious that I have to share the recipes with everyone. They are not low-carb, they’re not supposed to low-carb, just embrace the season of bad eating choices and go with it.

Here comes Carbageddon!

Original recipe Toll House Cookies


2 1/4 cup flour
1 tsp baking soda
1 tsp salt
1 cup butter, softened
3/4 cup sugar
3/4 packed brown sugar
1 tsp vanilla extract
2 large eggs
3 cups of chocolate chips


Preheat the oven to 375 degrees. Combine flour, baking soda and salt in a small bowl. Set aside. Beat butter, sugar, brown sufar, and vanilla extract in large bowl until creamy. Add eggs, one by one, beating well. Gradually beat in flour mixture.

Stir in chocolate chips. Drop rounded tablespoons onto ungreased baking sheets. Bake for 9-11 minutes or until golden brown. Cool on baking sheets before eating. Don’t eat while hot. That chocolate is like lava.

1/2 cup + 2 tablespoons of butter
1 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cup flour
1/4 cup + 2 tablespoons cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped maraschino cherries (cut into fourths)


Preheat oven to 350 degrees. Mix butter, sugar, egg and vanilla and blend well. In a separate bowl combine flour, cocoa, baking soda and salt. Mix in gradually. When mixture is complete and well-blended, mix in cherries.

Bake for 10-12 minutes on ungreased baking sheets. Be very careful when you remove cookies from the tray to cool. They are incredibly soft. They will try incredibly soft as well. If you want firmer cookies, leave cookies on the baking tray for a few minutes to firm up the bottoms.

1 cup (2 sticks) butter, softened
1 1/2 cups granulated sugar
1 egg
2 1/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract


Preheat oven to 350 degrees. Spray cookie sheets with cooking spray. Combine butter and granulated sugar until light and fluffy. Add egg and mix until well-combined. Stir in flour, baking powder, salt, and vanilla.

Scoop cookie dough by the tablespoon full and roll into a ball. Space cookies onto sheets, leaving generous room between them. Lightly press each cookie down. Add the sprinkles. Bake for 8 to 10 minutes or until lightly browned.
